Warning: Just reading this post might make you gain weight. Don’t say I didn’t warn you!
Most years my husband requests a carrot cake for his birthday. It’s really good, but it is definitely a once per year kind of recipe! I always top it with homemade cream cheese frosting.
This year, as I was mentally making sure I had all of the necessary ingredients on hand for the birthday cake, I began to realize that the cream cheese frosting isn’t that much different from cheesecake (another of my hubby’s favorites!). Then I began to imagine the combination of carrot cake and cheesecake. The flavors really would compliment each other very well…
This is not a carrot flavored cheesecake. It is not a carrot and cheese cake. It is a marriage of carrot cake and cheesecake in the same pan, therefore I give you carrot cheesecake cake.
First I made my carrot cake, an old Better Homes and Gardens recipe.
Ingredients
- 2 c flour
- 2 c sugar
- 1 t baking powder
- 1 t baking soda
- 1 t ground cinnamon
- 3 c shredded carrot
- 1 c oil
- 4 eggs
Instructions
- Combine flour, sugar, powder, soda, and cinnamon. Add carrot, oil, and eggs. Beat with an electric mixer until combined.
- Pour into 2 greased and floured 9" baking pans.
- If you are making a standard carrot cake, bake at 350 for about 30 minutes.
Then I mixed up a standard cheesecake recipe.
Ingredients
- 2 (8 oz) packages of cream cheese, softened
- 1 c sugar
- 3 eggs
- 1 t vanilla
Instructions
- Mix all ingredients well with electric mixer until smooth. Place in greased 9" pan.
- Bake at 350 for 45 minutes or until done.
I poured my carrot cake batter into two greased 9″ pans. Then I blobbed the cheesecake on top of the carrot cake. I was a bit concerned that it might run over, so I placed a cookie sheet underneath the cake pans. (Nothing ran over, so it didn’t wind up being a problem here.)
I baked the cakes at 350 for about 50 minutes.
I did top one with a mix of 2 c sour cream, 1/4 c sugar, and 1 t of vanilla and baked it for an extra 10 minutes.
If I wasn’t such a great wife, this cake would not make it sitting around in my refrigerator over night. Do I win a prize for best wife yet?

My spouse loves carrot cake for his birthday, too! I’d love to make this for him.
Let me make sure I understand this: you had two 9 inch cake pans, each with a layer of carrot cake batter. Unbaked. On top of (one? or both?) the pans you put a layer of the cheesecake batter (also unbaked). Then baked for 45 minutes. Then topped one of the cakes with the sour cream mixture and continued baking. Did you stack them together in the photo, or did you make 2 separate cakes, one with the sour cream top and the other without? I haven’t had enough tea yet today, I fear. Regardless of my inability to figure this out, I award you the wife prize today.

haha, Thanks for that! Yes, raw batter carrot cake on the bottom of 2 cake pans topped with raw cheesecake batter and baked just like that for 45 minutes. Then I topped just one of them with the sour cream mixture to give me a nice top layer. I just stacked the non sour cream cake on the bottom and the sour cream cake on the top and called it a day. Hope that’s less confusing!
